Chicken and beef meatloaf provides a balanced source of protein, essential for muscle maintenance and overall health.
Ingredients:
1 cup of milk
1/2 loaf French bread
A few sprigs of parsley
1 pkg. prosciutto
1 medium onion
1/2 lb. ground beef
1/2 lb. ground chicken
1 cup of grated parmesan cheese
1-2 eggs
black pepper
garlic (optional)
Instructions:
Preheat the oven to 375°F (190°C).
In a small pot, bring the milk to a simmer over medium heat. While it heats, slice the crust off the bread and cut into cubes. Turn off the stove and stir the cubed bread into the hot milk to soften.
Dice the parsley and prosciutto. Add them to a blender along with the grated Parmesan cheese and the moistened bread pieces. Pulse until well blended.
Dice the onion and place it in a large bowl with the ground chicken and beef. Add the eggs and the blended bread mixture, then mix until everything is well incorporated.
Line a loaf pan with parchment paper and fill it with the meatloaf mixture.
Bake for 60 minutes. Check with a meat thermometer to ensure the internal temperature reaches 165°F (74°C). If needed, return to the oven for 5 minutes at a time until fully cooked.
Let the meatloaf rest for 10 minutes before slicing and serving.
Tip: This dish is delicious served warm, but also makes excellent leftovers! Freeze extra slices to enjoy later.
