Long Life Noodles

Long life noodles are traditionally associated with good health and longevity, making them a popular choice in various cultures, especially during celebratory occasions.
Ingredients:
5 shiitake or other mushrooms
1 bunch green onions (white and green parts separated)
2 medium carrots
1 small green or napa cabbage,
12 oz Yi Mein or Chinese noodles
3‐4 tbsp oil
1 tsp sesame oil
1/8 tsp sugar
3‐4 tsp low sodium soy sauce
2 tbsp oyster sauce
freshly ground pepper
3 litres water
4 tbsp hot water
Instructions:
Bring 3 liters of water to a boil in a large wok or pot. Add noodles and cook until al dente (still firm to the bite), about 2–3 minutes. Drain and set aside.
In a small bowl, dissolve sugar in 4 tbsp hot water. Add soy sauce, oyster sauce, sesame oil, and pepper. Stir until combined to make the sauce. Set aside.
Heat a wok or large pan until just smoking. Spread 2 tbsp oil around the edges. Add julienned carrots and cook until softened. Add mushrooms, the white parts of green onions, and cabbage. Stir-fry for 3–4 minutes.
Add the cooked noodles and stir-fry until warmed through.
Pour the sauce mixture over the noodles and stir gently until evenly coated. Keep noodles long and unbroken for good luck and longevity.
Add the remaining green onion tops and toss until bright green.
Serve hot and enjoy!
