Salmon and rice dinner

A salmon and rice dinner provides a rich source of omega-3 fatty acids, which can support heart health and reduce inflammation.

Ingredients:

  • 1 cup of rice

  • 2 cups of water

  • 1 cup of frozen veggie mix

  • 1 fillet of salmon

  • 2 tbsp. of vegetable oil

  • Black pepper to taste

  • 1 lemon wedged

Instructions:

  1. Add 1 cup of rice, 2 cups of water, and your frozen vegetable mix to a rice cooker. Turn it on and cook until ready. (If you don’t have a rice cooker, cook on the stovetop following the directions on the rice package.)

  2. Place the salmon fillet on a plate and rub with oil and black pepper to taste.

  3. Cook the salmon:

    Air fryer: Place the fillet skin-side up and cook for 8 minutes.

    Oven: Preheat to 375°F (190°C). Place the fillet skin-side down and bake for 4 minutes, then flip skin-side up and bake for another 4 minutes.

  4. Once cooked, plate the salmon and squeeze fresh lemon juice over the top.

  5. Serve with the rice and vegetables. Enjoy!
