Tarragon Vinaigrette

Tarragon vinaigrette offers a bright, herbal flavour that can enhance salads and grilled vegetables.
Ingredients:
1 tsp Dijon mustard
2 tbsp lemon juice
2 tbsp white wine vinegar
1 tbsp minced shallot
2 tbsp fresh tarragon or 1 tsp dried tarragon
1/3 cup extra virgin olive oil
8 cups mixed greens or lettuce
Instructions:
Finely chop the shallots.
Mix in the mustard, tarragon, lemon juice, and vinegar.
Gradually whisk in the olive oil.
Drizzle the mixture over the greens.
