Colourful Coleslaw

Coleslaw made with carrot and purple cabbage is a nutritious addition to any meal, offering a rich source of vitamins A and C, which contribute to overall immune health.
Salad Ingredients:
● 1 head cabbage, green or purple, grated
● 6 carrots, washed and grated (leave on the peel)
Dressing Ingredients:
● 1 tbsp oil olive / canola
● 1 tbsp apple cider or rice vinegar
● 1 tbsp maple syrup or honey
● 1 tbsp low sodium soy sauce or alternative (coconut or Bragg’s aminos)
Instructions:
In a salad bowl, whisk dressing ingredients together with a fork.
Add shredded cabbage and carrots. Toss until evenly coated.
Chill in the fridge before serving for best flavor—the longer it sits, the more pickled and tasty it becomes.
