Shallot Vinaigrette

Shallot vinaigrette adds a robust flavour to salads while providing beneficial nutrients like antioxidants and vitamins.

Ingredients:

  • 2/3 cup extra virgin olive oil

  • 1 shallot minced

  • 3 tbsp red wine vinegar

  • cracked black pepper

  • 1 tsp Dijon mustard

Instructions:

  1. In a blender, combine all ingredients except for the oil.

  2. Gradually add the oil to emulsify, or alternatively, you can whisk the oil into the other ingredients and serve right away.
