Shallot Vinaigrette

Shallot vinaigrette adds a robust flavour to salads while providing beneficial nutrients like antioxidants and vitamins.
Ingredients:
2/3 cup extra virgin olive oil
1 shallot minced
3 tbsp red wine vinegar
cracked black pepper
1 tsp Dijon mustard
Instructions:
In a blender, combine all ingredients except for the oil.
Gradually add the oil to emulsify, or alternatively, you can whisk the oil into the other ingredients and serve right away.
