Salad in a Jar

Salad in a jar offer a convenient way to enjoy fresh flavours and nutrients, making it easy to incorporate into meals.
Ingredients:
5 tbsp favourite salad dressing
2 ½ cups cooked chickpeas (or 1 can
rinsed and drained canned chickpeas)
2 cups cooked grain (brown rice,
quinoa, barley, buckwheat)
5 cups torn lettuce
1 cup favourite chopped vegetables (pepper, cabbage, carrots, corn)
Instructions:
Get a clean 2-cup mason jar.
Add 1 tablespoon of dressing to the bottom of the jar.
Layer in ¼ cup chickpeas, ¼ cup cooked grain, and your choice of chopped or grated vegetables.
Top with lettuce.
Seal tightly with the lid.
Tips:
Store in the fridge for up to 3 days.
Perfect for a quick grab-and-go lunch.
