Ginger Coleslaw

Ginger coleslaw offers a refreshing twist on a classic side dish, combining the crunch of cabbage with the digestive benefits of ginger.
Dressing Ingredients:
1 knob of ginger
2 tbsp. of rice vinegar
2 tbsp. of vegetable oil
2 tbsp. of sesame oil
2 cloves of garlic
1/2 tsp. of chili flakes
black pepper to taste
Coleslaw Ingredients:
1 green onion
1/2 cup of cabbage
1/2 cup of lettuce
Instructions:
To make the dressing, peel the ginger knob with a spoon and chop it into chunks.
Place the ginger in a blender with the rice vinegar, vegetable oil, sesame oil, garlic cloves, chili flakes, and a dash of pepper. Blend until smooth.
Chop the lettuce and cabbage into bite-size pieces.
Pour the ginger dressing over the vegetables and toss to combine.
Serve as a side with lunch or dinner and enjoy!
Tip: The cabbage and lettuce can be replaced with a bag of coleslaw mix, if preferred.
