Easy Tofu Rosé Spaghetti

Easy Tofu Rosé Spaghetti is a creamy and comforting plant-based pasta dish that offers a simple way to add protein and flavour to your meal.

Ingredients:

  • 200 grams extra firm tofu

  • 200 grams soft or silken tofu

  • 1 cup pureed tomatoes (tomato passata - I use low sodium, no additives)

  • 1 tbsp oil (I use olive or avocado oil)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp basil

  • ½ tsp oregano

  • Pinch salt

  • Black pepper as desired

Instructions:

  1. Cook spaghetti (or other noodles), drain, and add to serving dish, either beforehand or while making the sauce.

  2. Add oil to pan on medium heat.

  3. Crumble the extra firm tofu right into your pan. Alternatively, you can use a tofu crumble that you have already cooked in advance.

  4. Cook for a few minutes until tofu starts to brown.

  5. Add spices.

  6. While it’s cooking, blend tomato puree and soft tofu in a blender or chopper.

  7. Add the saucy mix to the pan and stir.

  8. Cook for another 5 minutes, serve, and enjoy.

Tips:

  • Spice it Up: Add other herbs and spices like oregano, thyme, parsley, chili peppers

  • Make it Fresh: Instead of dried spice, use garlic cloves (1-2) and fresh onion (2 tbsp)

  • Veggie Options: Add kale, broccoli, zucchini, mushrooms, bell peppers, whatever you like or is in your fridge. You might even used spiralized veggies for your “noodles.”

  • Elevate: Sprinkle nutritional yeast or parmesan, fresh or dried parsley, green onions.

Storage:

Store leftovers in the refrigerator up to 3 days or in the freezer for up to 1 month.
