Tofu Mousse/Pudding

Creamy and delicious, tofu mousse pudding is a simple, protein-rich dessert that blends into a smooth treat that keeps you satisfied.
Ingredients:
150 grams soft or silken tofu
1 tbsp maple syrup
½ tsp vanilla
Flavour Options: choose one from the list below
Chocolate: 1.5 tbsp cacao powder
Berries: ¼ cup fresh or thawed berries
Lemon: 1.5 tbsp lemon juice and ½ tsp lemon zest
Peanut butter: 1 tbsp peanut butter
Mocha: 1 tbsp cacao and 1 tsp instant coffee
Instructions:
Blend all until smooth.
Taste and add more flavor or syrup, if needed, then blend again.
Refrigerate at least 30 minutes.
Optional additions:
Fats for Flavour/Thickness: Add yogurt, coconut milk, plant milk, coconut oil, chia seeds.
Elevate: Add berries, whip, yogurt, mint leaves, citrus/zest, nuts, raw cacao, chocolate chips, cinnamon, or add oatmeal and enjoy for breakfast.
Storage:
Store leftovers in the refrigerator and enjoy within 2–3 days.
