Tofu Scramble

Tofu scramble is a warm and flavourful plant-based meal that provides protein and can be easily customized with your favourite vegetables and seasonings.
Ingredients:
150 grams (100 + 50) – Medium, firm, or extra firm* tofu
1 tbsp nutritional yeast
1 tsp olive oil (for pan)
¼ tsp garlic powder
A few pinches of turmeric for color
Black pepper
Pinch kala namak (black salt for eggy taste – or just use regular salt)
1-2 tbsp water
Instructions:
Spray the pan with oil on medium heat.
In a bowl, crumble about 2/3 of the tofu (100 grams) with your hands or a fork.
In another bowl, add the remaining 1/3 of the tofu (50 grams), water, and spices, then mash with a fork. You could also use a small chopper for this step.
Add both mixtures to the pan and let them sit for a minute or two before you stir.
Stir lightly, as if making scrambled eggs.
Cook for about 5 minutes or until you have the desired eggy texture.
Note: Medium firm is preferred for a softer scramble, but many people use firm or extra firm for the structure, aesthetics, and a bit more texture.
Optional additions:
Veggie option: Sauté veggies after the oil and before the tofu, or add raw veggies after.
Elevate: Sprinkle with black pepper, chilis, chives, or microgreens.
Storage:
Store leftovers in the refrigerator for 1-2 days. Enjoy on toast or a wrap the next day.
