Zucchini Latkes

Zucchini latkes are a nutritious option as they provide essential vitamins and minerals while being lower in potassium compared to traditional potato latkes.

Ingredients:

  • 2 medium zucchini

  • ½ cup chopped green onion

  • 2 large eggs

  • 2 tbsp cornstarch

  • 1-2 tbsp olive oil

Instructions:

  1. Grate the zucchini and squeeze out excess liquid using cheesecloth or a clean kitchen towel.

  2. In a medium bowl, combine the zucchini with the chopped green onion. Add the eggs and cornstarch, then stir until fully incorporated.

  3. Heat olive oil in a frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the pan.

  4. Flatten each latke with a spatula and fry until golden brown on both sides.

  5. Transfer to a paper towel–lined plate to drain any excess oil.

  6. Serve hot or cold, and enjoy!

Tips:

  • A great substitute for potato latkes, with more protein and fiber.

  • Bake in batches in the oven instead of frying, if preferred.

  • These freeze well and reheat quickly in the oven or microwave.
