Zucchini Latkes

Zucchini latkes are a nutritious option as they provide essential vitamins and minerals while being lower in potassium compared to traditional potato latkes.
Ingredients:
2 medium zucchini
½ cup chopped green onion
2 large eggs
2 tbsp cornstarch
1-2 tbsp olive oil
Instructions:
Grate the zucchini and squeeze out excess liquid using cheesecloth or a clean kitchen towel.
In a medium bowl, combine the zucchini with the chopped green onion. Add the eggs and cornstarch, then stir until fully incorporated.
Heat olive oil in a frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the pan.
Flatten each latke with a spatula and fry until golden brown on both sides.
Transfer to a paper towel–lined plate to drain any excess oil.
Serve hot or cold, and enjoy!
Tips:
A great substitute for potato latkes, with more protein and fiber.
Bake in batches in the oven instead of frying, if preferred.
These freeze well and reheat quickly in the oven or microwave.
