  • 3 large potatoes

  • A drizzle of vegetable oil

  • 2 cups of water

  • 2 cups of vinegar

Instructions:

  1. In a large pot, combine 2 cups water and 2 cups vinegar. Bring to a gentle boil over medium heat.

  2. Slice potatoes into medallions and add to the boiling liquid. Cook for 5 minutes.

  3. Meanwhile, preheat your oven or air fryer to 375°F (190°C).

  4. Drain potatoes thoroughly and pat completely dry with paper towels. Toss with a light drizzle of vegetable oil until evenly coated.

  5. Arrange in a single layer and bake/air fry for 20 minutes, or until golden and crispy.

  6. Season to taste and serve immediately while hot!

For low-potassium modification:

Boil potato slices in plain water for 3 minutes, drain completely, then boil again in fresh water for another 3 minutes. This process helps reduce the potassium content before proceeding with the oil coating and baking steps.
