Twice Boiled Potato Chips

These chips unique texture and enhanced flavour, making them a satisfying snack option that can fit into a balanced diet.
Ingredients:
3 large potatoes
A drizzle of vegetable oil
2 cups of water
2 cups of vinegar
Instructions:
In a large pot, combine 2 cups water and 2 cups vinegar. Bring to a gentle boil over medium heat.
Slice potatoes into medallions and add to the boiling liquid. Cook for 5 minutes.
Meanwhile, preheat your oven or air fryer to 375°F (190°C).
Drain potatoes thoroughly and pat completely dry with paper towels. Toss with a light drizzle of vegetable oil until evenly coated.
Arrange in a single layer and bake/air fry for 20 minutes, or until golden and crispy.
Season to taste and serve immediately while hot!
For low-potassium modification:
Boil potato slices in plain water for 3 minutes, drain completely, then boil again in fresh water for another 3 minutes. This process helps reduce the potassium content before proceeding with the oil coating and baking steps.
