Sweet Red Bean Soup

Sweet red bean soup is rich in antioxidants and can help support kidney health by providing essential nutrients. Its high fibre content promotes healthy digestion and can aid in managing blood sugar levels.
Ingredients:
1 cup dried azuki beans
7‐8 cups water, depending on how thick/thin you would like it
¼ cup rock sugar, regular sugar, or preferred sweetener
¼ tsp orange zest or
1 piece of chen pi (dried mandarin peel)
½ cup coconut milk; or low potassium option ‐ Silk brand coconut milk (this is a low potassium alternative to coconut water or canned coconut milk)
Instructions:
Rinse dried red beans under cold water. Soak overnight in the fridge.
Drain and rinse beans. Transfer to a pot with 6 cups fresh water and orange zest (or chen pi). Bring to a boil, then simmer for 1 hour with the lid slightly ajar. Add more water if needed for desired thickness.
When beans are soft and breaking down, remove the chen pi. Mash some beans with a potato masher or the back of a spoon for a creamier texture.
Stir in sugar until dissolved. Remove from heat and gently swirl in coconut milk.
Serve warm, chilled, or freeze into popsicles for a refreshing treat.
