Salmon Stuffed Peppers

Salmon stuffed peppers are a nutritious meal option that provides a rich source of omega-3 fatty acids, promoting heart health and reducing inflammation.
Ingredients:
1 can salmon, rinsed and drained
juice of 1 lemon
1 tsp olive oil
¼ onion, finely diced
¼ cup chopped parsley
1 bell pepper
Instructions:
In a bowl, combine salmon, lemon juice, olive oil, onion, and parsley. Mix well.
Wash the pepper, cut it in half, and remove the seeds.
Scoop half of the salmon mixture into each pepper half.
Tips: Serve cold, or place under the broiler with a sprinkle of cheese if you prefer it warm.
