Baked Blackberry Galette

Baked blackberry galette is a delicious way to enjoy a variety of antioxidants present in berries, which can support overall kidney health.
Ingredients:
1 cup spelt or whole wheat flour
1 cup all-purpose flour
2/3 cup cold Earth Balance Baking Stick
1 tablespoon cane sugar
½ teaspoon salt
½ scant cup water
Blackberry Galette Filling
4 cups of frozen or fresh blackberries
2 tablespoons cane sugar
1 tablespoon cornstarch
zest of half a lemon
pinch of salt
Instructions:
Make the dough: Combine flour, cane sugar, salt, and butter in a food processor. Pulse 10-12 times until butter forms pea-sized pieces. While pulsing, gradually drizzle in water until dough just comes together. Wrap and refrigerate for 1 hour.
Prepare the filling: If using frozen berries, thaw in a mesh strainer set over a bowl to catch excess liquid. In a medium bowl, gently combine berries with sugar, cornstarch, lemon zest, and salt. Set aside.
Assemble the galettes: Preheat oven to 400°F (205°C). Roll chilled dough on a floured surface and cut into 4 equal squares. Place a generous scoop of berry mixture in the center of each square, leaving a 2-inch (5cm) border. Fold the edges up and over the filling to create rustic, shallow bowls, gently pressing seams to seal.
Bake: Place galettes on a parchment-lined baking sheet. Bake for 20-30 minutes, checking after 20 minutes, until the filling is jammy and bubbling and the crust is golden brown and crisp. Cool for at least 10 minutes before serving.
Storage:
Galettes will keep covered at room temperature for 1 day, or wrapped in the refrigerator for up to 3 days.
